Shrimp frittata

Ingredients:

  • 1/4 cup milk
  • 10 large eggs
  • 1 cup chopped boiled shrimp
  • 2 tbsp. l. olive oil
  • 0.5 cup chopped celery
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 2 tbsp chopped fresh parsley
  • 0.5 tsp seafood seasoning, such as Old Bay

Preparation:

  1. Preheat oven to 200°C.
  2. In a medium oven-safe nonstick skillet, heat 1 tablespoon olive oil over medium-high heat. Add the celery, onion, and green pepper and cook, stirring, until softened, about 5 minutes. Remove from heat, transfer the vegetables to a plate, and set aside. Wipe out the skillet.
  3. In a large bowl, combine the milk, eggs, 3/4 teaspoon salt, and a pinch of freshly ground black pepper. Add the sautéed vegetables, shrimp, parsley, and seafood seasoning and stir to distribute evenly.
  4. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the egg mixture and cook until the edges begin to set, about 2 minutes. Transfer the skillet to the oven and bake until the frittata is set in the center, 15-20 minutes. Let it rest for 5 minutes, then carefully transfer to a serving platter and cut into wedges.
