Ingredients:
- 8 sausages
- 450 g of minced chicken
- 1 tbsp. l. olive oil
- 3 cloves garlic, crushed
- 2 stalks celery, diced
- 1 - 2 sweet peppers, diced
- 1 jalapeño, seeded and diced
- 1 medium onion, diced
- 2 tablespoons chili powder
- 1 tsp ground cumin
- 1/4 teaspoon salt
- 2 x 400g cans of diced tomatoes
- 1 can (425 g) kidney beans
- 1 can (425 g) pinto beans
- 8 whole grain hot dog buns
- 1/4 cup grated cheddar
- 0.5 cup chopped green onions
- Plain nonfat Greek yogurt, for serving (optional)
Preparation:
- In a large nonstick skillet, heat the olive oil over medium-high heat. Add the garlic, celery, bell pepper, jalapeño, and onion. chili powder, cumin, and salt. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes.
- Add the tomatoes and beans and bring to a boil. Add the ground chicken. Reduce the heat and simmer, covered, stirring occasionally, until the flavors are combined and the chili begins to thicken, about 1 hour.
- Bring a saucepan of water to a gentle simmer. Add the sausages and cook for 10 minutes. Place each sausage in a bun. Top with a generous dollop of bean chili. Sprinkle with grated cheese and green onions, and top with Greek yogurt.
