Hot dogs with ground meat "Chili dogs"

Ingredients:

  • 8 sausages
  • 450 g of minced chicken
  • 1 tbsp. l. olive oil
  • 3 cloves garlic, crushed
  • 2 stalks celery, diced
  • 1 - 2 sweet peppers, diced
  • 1 jalapeño, seeded and diced
  • 1 medium onion, diced
  • 2 tablespoons chili powder
  • 1 tsp ground cumin
  • 1/4 teaspoon salt
  • 2 x 400g cans of diced tomatoes
  • 1 can (425 g) kidney beans
  • 1 can (425 g) pinto beans
  • 8 whole grain hot dog buns
  • 1/4 cup grated cheddar
  • 0.5 cup chopped green onions
  • Plain nonfat Greek yogurt, for serving (optional)

Preparation:

  1. In a large nonstick skillet, heat the olive oil over medium-high heat. Add the garlic, celery, bell pepper, jalapeño, and onion. chili powder, cumin, and salt. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes.
  2. Add the tomatoes and beans and bring to a boil. Add the ground chicken. Reduce the heat and simmer, covered, stirring occasionally, until the flavors are combined and the chili begins to thicken, about 1 hour.
  3. Bring a saucepan of water to a gentle simmer. Add the sausages and cook for 10 minutes. Place each sausage in a bun. Top with a generous dollop of bean chili. Sprinkle with grated cheese and green onions, and top with Greek yogurt.
