Fried tofu in lettuce leaves topcook.tomathouse.com
Ingredients:
- 1 package of firm tofu (340 - 400 g)
- 2 teaspoons peanut butter
- 1/4 tsp chili powder, or to taste
- 3 green onions, thinly sliced
- 2 fresh ears of corn, kernels removed
- 1/4 cup soy sauce
- 1 teaspoon balsamic vinegar
- 6 large inner romaine lettuce leaves (from the core)
- 2 avocados, thinly sliced
Preparation:
- Heat the peanut oil in a nonstick skillet over medium-high heat. Add the tofu and break it up into very small pieces. Cook for a few minutes, until most of the liquid has evaporated and the tofu begins to brown.
- Add chili powder, a little salt and black pepper, and stir. Add the green onions and corn and cook for a few minutes (the corn may remain crispy). Add the soy sauce and cook until most of the liquid is absorbed. Turn off the heat and stir in the balsamic vinegar.
- Spread the mixture among lettuce leaves, add avocado slices, fold the leaves, and enjoy!
