Chocolate pudding with avocado

Ingredients:

  • 1 large ripe avocado, cut into pieces
  • 1/3 cup coconut milk
  • 55 g dark chocolate (70% cocoa), melted
  • A pinch of coarse salt
  • Non-caloric sweetener (optional)

Preparation:

  1. Combine the avocado, coconut milk, chocolate, and salt in a food processor and blend until thick and creamy. Taste and add sweetener if desired. Transfer the pudding to two small bowls. Serve immediately or cover with plastic wrap and refrigerate. Can be stored for up to 2 days.
