Ingredients:
- 1/4 cup white, red, or sherry vinegar
- 2 - 3 teaspoons Dijon mustard
- 1 small clove of garlic, crushed
- 3/4 cup extra-virgin olive oil
Preparation:
- Place a medium bowl on a folded kitchen towel (this will help keep it in place while whisking). Whisk together the vinegar, mustard, garlic, 1 1/4 teaspoons of salt, and a pinch of freshly ground black pepper. Slowly pour in the olive oil, whisking constantly, until well combined. Use the dressing immediately or store in a tightly sealed container for up to 3 days.
