Chicken in pineapple sauce with rice topcook.tomathouse.com
Ingredients:
- 2 boneless, skinless chicken breasts, cut into strips
- 2 tablespoons of vegetable oil
- 0.5 cup chopped red bell pepper
- 0.5 cup chopped green bell pepper
- 1 cup canned pineapple chunks, save 0.5 cup syrup, drain the rest
- 3 tablespoons light brown sugar
- 3 tbsp. l. rice vinegar
- 1/4 cup chicken broth
- 4 teaspoons of cornstarch mixed with 4 teaspoons of water
- Boiled rice, for serving
Preparation:
- Heat vegetable oil in a large nonstick skillet over medium heat. Season the chicken strips with salt and add them to the skillet. Fry them and transfer to a plate. Add the red and green peppers and fry for 1 minute.
- Add the pineapple chunks, juice, sugar, vinegar, and chicken broth and bring to a boil. Simmer until the sauce begins to thicken. Add the cornstarch mixture and bring to a simmer. Add the chicken strips and cook for 5 minutes. Serve with rice.
