Ingredients:
- 6 cups shredded chicken, cooked through
- 2 packages of 280g frozen broccoli, chopped
- 2 cans of 300 gr. canned cream of mushroom soup
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup grated sharp cheddar
- 1 tbsp. freshly squeezed lemon juice
- 1 teaspoon curry powder
- 0.5 cups dry white wine
- 0.5 tbsp. freshly grated parmesan
- 0.5 cup bread crumbs
- 2 tbsp melted butter
- Grated Gruyere, for serving
Preparation:
- Preheat oven to 175°C.
- Remove the outer wrappers from the broccoli boxes. Open each box on one side. Microwave on full power for 2 minutes to defrost. Drain the broccoli and place in a baking dish. Add the shredded chicken.
- In a medium bowl, combine cream of mushroom soup, mayonnaise, sour cream, cheddar, lemon juice, curry powder, wine, salt, and black pepper to taste. Stir to form a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.
- Transfer everything to a 27.5 x 17.5 cm (11 x 6.5 in) pan or two 22 cm (9.5 in) square disposable pans, greased with vegetable oil. Spread evenly and smooth with a spatula. Mix together the Parmesan, bread crumbs, and butter and sprinkle on top.
- Bake for approximately 30-45 minutes.
