Ingredients:
- 2 cups penne pasta, cooked until al dente
- 1/3 cup extra-virgin olive oil
- 2 cloves garlic, crushed
- 1/4 tsp red pepper flakes
- 1/4 head of broccoli, cut into thin florets, stem peeled and cut into strips
- 2 tablespoons red wine vinegar
- A few spoons of water or pasta water, as needed
- Parmesan, for serving
Preparation:
- In a large skillet over medium heat, heat the olive oil, garlic, and pepper until fragrant. Once the garlic is golden, remove it from the pan. You'll be left with a fragrant garlic oil. Add the broccoli to the skillet. Make sure the broccoli is completely dry before adding it to the oil..
