Summer Vegetable Sauté topcook.tomathouse.com
Ingredients:
- 1 tbsp. l. olive oil
- 1 teaspoon crushed garlic
- Half a red bell pepper, chopped
- Half a yellow bell pepper, chopped
- 6 champignons, chopped
- 4 cauliflower florets, chopped
- Half a zucchini, chopped
- Half a yellow squash, chopped
- 0.5 tsp dried oregano
- 2 tablespoons soy sauce
- 2 tablespoons chicken broth
Preparation:
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, for 1 minute. Add all the vegetables and cook until wilted, about 2 minutes.
- Add oregano, soy sauce, and chicken broth, stir well, and cook just until the vegetables are wilted, about 3 minutes. Remove from heat and serve.
