Preparation:Take 1 small head of white cabbage, cut it into 4 pieces, peel the core and shred finely; transfer to a large bowl. Pour 4 tablespoons of boiling salted water over the cabbage and toss with tongs until completely wilted. Let it sit for 15 minutes. Drain, rinse and dry the cabbage. In a bowl, combine 1/4 tablespoon each of white wine vinegar and olive oil, 2 teaspoons of sugar, 1 teaspoon of coarse salt and a little freshly ground black pepper. Add the cabbage and toss well.
