Fried red cabbage

Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 1 small onion, thinly sliced
  • Half a red cabbage, shredded
  • 1/3 cup white or apple cider vinegar
  • 2 heaping tablespoons of sugar
  • 1 tsp. mustard seeds

Preparation:

  1. Heat a skillet over medium heat. Add olive oil and onion; cook for 2 minutes. Add the cabbage and cook, stirring, until wilted, 3-5 minutes. Add the vinegar to the skillet and stir. Sprinkle the cabbage with sugar and stir again. Season with mustard seeds, salt, and black pepper and reduce the heat slightly. Cook, stirring occasionally, for another 10 minutes or until tender to serve.
