Turkey Reuben Sandwiches topcook.tomathouse.com
Ingredients:
- 450 g of sliced turkey fillet
- 2.5 tbsp softened butter
- 3 green onions, white parts and 5 cm of greens, finely chopped
- 1 can (220 g) sauerkraut, rinsed
- 1 small apple, peeled and grated
- 1/4 cup mayonnaise
- 2 - 3 tablespoons chili sauce
- 2 tsp capers, chopped + 1 tsp liquid
- 8 slices of pickled cucumbers + 1 teaspoon of brine
- 8 slices of seeded rye bread
- 1.5 - 2 cups grated Swiss cheese (about 170 g)
Preparation:
- In a medium saucepan, heat 1 tablespoon of butter over medium heat. Add the white part of the onion and cook for about 3 minutes. Add the sauerkraut and apple, season with salt and pepper. Cook until the sauerkraut is wilted and golden brown, about 10 minutes. Add half of the green onions and cook for another minute.
- Preheat the oven to broil. Combine the mayonnaise, chili sauce, remaining green onions, capers and their liquid, and the pickle brine.
- Spread about 1/2 teaspoon of butter on one side of each slice of bread. Place 4 slices, buttered side down, on a foil-lined baking sheet. Spread mayonnaise mixture on each slice, then top with turkey, pickles, and sauerkraut. Sprinkle with cheese and broil until the cheese is melted, about 2 minutes.
- Spread more mayonnaise mixture on the dry sides of the remaining 4 slices of bread; place buttered side down on the sandwiches. Return to the broiler and broil until golden brown, turning once, about 2 minutes.
