Biscuits with molasses butter

topcook.tomathouse.com

Ingredients:

  • 2.5 cups flour + extra for work
  • 165g unsalted butter (110g cubed, 55g melted)
  • 1 tbsp baking powder
  • 1 teaspoon coarse salt
  • 1 teaspoon of sugar
  • 1/4 teaspoon of baking soda
  • 1 cup of sour milk or kefir
  • 110 g unsalted butter, room temperature
  • 2-3 tablespoons of molasses

Preparation:

  1. Bake the layered buns:

Preheat oven to 200°C. Spray a baking sheet with cooking spray.
  2. In a large bowl, combine the flour and cubed butter. Using a pastry blender, blend the butter into the flour until the mixture resembles coarse grains. Add the baking powder, salt, sugar, and baking soda. Make a well in the center of the flour mixture and pour in the buttermilk. Mix with a fork until the dough begins to form a ball. It will be slightly dry.
  3. Flour a clean work surface, your palms, and a rolling pin. Turn the dough out onto the work surface. Knead it for 1-2 minutes, folding it toward you each time. Then roll it out to a thickness of about 1 cm. Dust a 3-inch cookie cutter or the rim of a glass with flour and cut out round buns from the dough. Gather the remaining dough into a ball, roll it out again, and cut out more circles. Repeat this process until all the dough is used.
  4. Place the buns on a baking sheet and bake until the tops are golden brown, 10-15 minutes. While they're still warm, brush each bun with melted butter.
  5. Make molasses butter:

Mix butter and molasses. Serve warm rolls with butter.
