Green salad with warm tomato dressing

Ingredients:

  • 1/4 baguette, cut into 0.5 cm cubes.
  • 1/3 cup + 1 tbsp extra-virgin olive oil
  • 1 shallot, thinly sliced
  • 1 cup grape tomatoes, halved
  • Juice of 1 lemon
  • 1 head red leaf lettuce, torn into pieces
  • 1 head romaine lettuce, torn into pieces
  • 0.5 cup crumbled blue cheese

Preparation:

  1. Preheat oven to 220°C.
  2. Prepare the croutons:


    Toss the bread cubes with 1 tablespoon of olive oil and place on a baking sheet. Season with salt and pepper. Bake until golden brown, about 8 minutes.
  3. Meanwhile, prepare the dressing:


    In a medium skillet, heat the remaining 1/3 cup olive oil over medium heat. Add the shallots and tomatoes and cook until softened, about 5 minutes. Add lemon juice, salt, and pepper.
  4. Combine the salad in a large bowl. Drizzle with the warm dressing, add the croutons, and toss gently. Sprinkle with crumbled blue cheese.
