Grilled Foil-Wrapped Beans with Paprika Butter topcook.tomathouse.com
Ingredients:
- 2 tablespoons unsalted butter, room temperature
- 0.5 tsp smoked paprika
- 1 tsp finely grated lemon zest + lemon wedges for serving
- 330 g green beans, ends trimmed
- 330 g yellow wax beans, ends trimmed
- 1 can (430 g) lima beans, rinsed
- 3 cloves garlic, chopped
- 2 tbsp. l. olive oil
Preparation:
- Preheat the grill to medium-high heat. In a small bowl, combine the butter, paprika, lemon zest, 2 pinches of salt, and ground black pepper until smooth. In a large bowl, combine the green, yellow, and lima beans with the garlic, olive oil, 1 teaspoon of salt, and a small amount of ground black pepper.
- Place two 60cm (24 in) sheets of heavy-duty foil on the counter. Spread the vegetables evenly across both sheets. Add 1 tablespoon of water to each mound of beans. Bring the short ends of the foil together and fold them to seal, then fold the long sides over and seal tightly to form two parcels.
- Grill the bean wraps for 8 minutes. Turn and continue grilling until the beans are tender and charred in spots, about 4 more minutes. Carefully open the wraps and toss the vegetables with the herb butter. Serve with lemon wedges.
