Ingredients:
Bars
- 1.5 cups broken pretzels
- 1 and 1/4 cups premium flour
- 1.5 tsp baking powder
- 1 teaspoon of salt
- 110 g unsalted butter
- 1.5 cups light brown sugar
- 2 large eggs, lightly beaten
- 2 tsp vanilla extract
Topping
- 8 marshmallows, cut in half crosswise
- 1/4 tbsp. peanut butter granules
- 1 teaspoon of vegetable oil
- 1/4 tbsp. semi-sweet chocolate granules
Preparation:
- Position a rack in the middle of the oven and preheat the oven to 350°F (175°C). Line a 9-inch (22 cm) square cake pan with aluminum foil, leaving a 2-inch (5 cm) overhang on all sides. Lightly spray the foil with cooking spray.
- In a food processor, pulse 1 cup of pretzel pieces until finely ground (you should have about 1/2 cup crumbs). Transfer to a bowl. Stir in the flour, baking powder, and salt.
- Melt the butter in a saucepan over medium heat. Remove from heat and stir in the brown sugar. Let cool slightly, then add the eggs and vanilla. Fold the dry ingredients into the butter mixture in two additions.
- Pour the batter into the prepared pan. Scatter the remaining 1/2 cup of pretzel pieces over the top. Bake until golden brown and a toothpick inserted into the center comes out mostly clean with a few crumbs, 25-30 minutes. Cool completely in the pan on a wire rack, then pull the foil to release the cake from the pan and transfer it to a wire rack.
- Preheat the oven to broil. Press the marshmallow halves, cut-side down, in even rows over the crust. Broil, rotating the baking sheet as needed, until the marshmallows are golden brown, 1 to 2 minutes; let cool.
- Place the peanut butter granules and 0.5 teaspoon of vegetable oil in a microwave-safe bowl and microwave in 30-second intervals, stirring, until the granules are melted and the mixture is smooth. Repeat with the chocolate chips and the remaining 0.5 teaspoon of vegetable oil in another bowl. Drizzle the melted peanut butter and chocolate glaze over the cake.
- Let set at room temperature or refrigerate, then cut into bars.
