topcook.tomathouse.com

Ingredients:

  • 15 dried pitted dates
  • 450g cooked Spanish chorizo sausage, cut into 15 cubes (to fit inside the dates)
  • 5 strips bacon, cut lengthwise into 3 pieces
  • 0.5 tbsp. maple syrup

Preparation:

  1. Preheat oven to 200°C. Line a baking sheet with a silicone baking mat or parchment paper.
  2. Make a slit in one side of each date and insert a cube of chorizo. Press the date tightly shut. Wrap each date with a strip of bacon and secure with a toothpick. Flip the dates and continue baking until the bacon is almost completely cooked through, another 8-10 minutes.
  3. Remove the dates from the oven and brush both sides with maple syrup. Return the baking sheet to the oven and continue baking until the dates are very crisp and sticky, 1-2 minutes. Serve warm.
