Sunday with poached dried apricots

Preparation:

In a glass baking dish, combine 2 cups dried apricots, 2 cups water, 2 tablespoons sugar, and 1 strip of lemon zest. Cover and microwave for 5 minutes. Let sit for 5 minutes, then uncover and let cool. Spoon the dried apricots over vanilla yogurt ice cream and sprinkle with candied walnuts.
