Ingredients:

  • 4 cups seedless watermelon chunks
  • 2 tablespoons white wine vinegar
  • Juice and zest of 1 lime
  • 1/4 cup extra-virgin olive oil
  • 1 red onion, thinly sliced
  • 1 cup feta cheese
  • 1/4 cup mint, thinly sliced
  • 2 cups arugula

Preparation:
