Green gazpacho with grapes and avocado topcook.tomathouse.com
Ingredients:
- 2 cups seedless white grapes
- 3 green onions, coarsely chopped
- 1.5 cucumbers, peeled and cut into pieces
- 1 clove of garlic
- 1 small bunch fresh parsley (leaves only)
- Half an avocado, cut into pieces
- 1/3 cup olive oil
- 3 tablespoons white wine vinegar
- 1/4 cup chopped toasted almonds
Preparation:
- In a food processor, puree the grapes, green onions, cucumbers, garlic, parsley, and avocado. Add the olive oil and white wine vinegar and blend again until smooth. Add 1/4 cup ice water and blend again. Add more water if the soup seems too thick.
- Sprinkle the gazpacho with 1 teaspoon of salt and 1/4 teaspoon of black pepper. Refrigerate for about 1 hour. Serve with toasted almonds.
