Watermelon jerky

Ingredients:

Preparation:

  1. Slice a small seedless watermelon into 0.5 cm thick slices; trim off the rind. Cut the slices into 2.5 x 7 cm rectangles. Arrange them on 2 wire racks set on baking sheets.
  2. Bake in the oven at 120°C (250°F) until the watermelon is almost completely dry, but not browned, 3 hours. Then reduce the oven temperature to 95°C (205°F) and continue drying, rotating the baking sheets and turning the pieces every 2 hours, until the watermelon is thin, another 3-4 hours.
