Low-calorie tacos (beef in lettuce)

topcook.tomathouse.com

Ingredients:

    Steak

  • 1 orange with peel, thinly sliced, divided
  • Half an onion, peeled and thinly sliced, divided
  • 4 cloves garlic, halved and crushed, separated
  • 1 kg flank steak
  • 1 cup light beer, preferably lager

    Salsa

  • 1/3 cup lightly salted soy sauce
  • Juice of 1 large lime
  • Half a serrano pod, seeded and finely chopped
  • 1 green onion, thinly sliced
  • 2 tsp chopped fresh cilantro
  • 1 head of lettuce, leaves separated
  • 1 avocado, peeled, pitted and thinly sliced

Preparation:

  1. Steak:

Arrange half the orange slices, half the onion slices, and half the garlic pieces in the bottom of a glass dish large enough to accommodate the steak. Season the flank steak with salt and black pepper and place it in the prepared glass dish. Arrange the remaining oranges, onion, and garlic on top of the steak and pour the beer over it. Cover with plastic wrap and let sit at room temperature for 1 hour or refrigerate overnight.
  2. Place a grill pan over medium-high heat, or preheat a gas or charcoal grill.
  3. Remove the meat from the marinade. The marinade is no longer needed. Grill the steak to your desired doneness, about 4 minutes per side for medium-rare. Let the steak rest for 10 minutes. Transfer the grilled steak to a cutting board and slice across the grain into strips.
  4. Salsa:

In a small bowl, combine all salsa ingredients.
  5. For assembly:

Assemble the tacos by arranging the steak and avocado pieces among the lettuce leaves. Drizzle with salsa.

Note: Marinated steak can also be grilled in the oven.
